INGREDIENTS

  • 12 cup (50g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)
  • 12 cup (125ml) almond milk (or dairy alternative)
  • 12 cup (125ml) water
  • 1 medium banana chopped
  • 14 tsp ground cinnamon
  • 2 tsp maple syrup (honey or rice malt syrup)
  • 2 tbs (20g) walnuts chopped
  • 1 tbs (20g) crunchy natural peanut butter (or other nut butter)
  • Simple Blueberry Jam
  • 14 cup (40g) fresh or frozen blueberries
  • 1 tsp water
  • pinch of salt
METHOD
This method is based on 1 serving
  1. Place oats, milk and water in a saucepan and bring to a gentle simmer. 

     

  2. Add banana, cinnamon and a pinch of salt and stir to combine. Continue stirring until thick and creamy and remove from heat.

     

  3. At the same time, make jam by adding all ingredients to a saucepan. Cook, stirring frequently, until thick and jammy. 

     

  4. To serve, place oats in bowl and top with blueberry jam, maple syrup, walnuts and peanut butter. Enjoy!
