INGREDIENTS

  • 13 cup (35g) almond meal
  • 3 tbs (30g) natural protein powder
  • 3 tbs (30g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)
  • 2 tbs desiccated coconut
  • 1 tbs (30g) honey (brown rice syrup or maple syrup)
  • 2 tsp lemon zest
  • 2 tsp lemon juice
  • 20g pistachios roasted & finely chopped
METHOD
This method is based on 4 servings
  1. Combine all ingredients except pistachios in a medium bowl and mix well to combine. The mixture should form a nice dough that holds together when squeezed. 

     

  2. Form mixture into 8 even balls and roll in pistachio crumbs.

     

    Store refrigerated in an airtight container.
