INGREDIENTS

  • 2 tsp hulled tahini
  • 2 tsp lemon juice
  • salt & pepper, to taste
  • 1 head of baby romaine lettuce chopped
  • 100g cherry tomatoes halved
  • 12 cup (70g) frozen podded edamame defrosted
  • 1 can of chickpeas (14 oz can) drained & rinsed
  • 1 tbs pumpkin seeds (pepitas)
  • 1 mini (1 oz) wholegrain pita bread (or gluten-free) warmed
METHOD
This method is based on 1 serving
  1. Whisk tahini and lemon juice together in a bowl and season with salt and pepper. 

     

  2. Add lettuce, tomatoes, edamame and chickpeas and toss well.

     

  3. Transfer to a serving bowl, top with pepitas and serve with warm pita bread.
