There is no better parfait to start the day! Not only is this tasty parfait easy to prep, we’ve harnessed the power of chia seeds to fill you up and keep you motoring through the morning.
INGREDIENTS

SERVING 1

  • 23 cup (160ml) milk, reduced fat (or dairy-free alternative)
  • 14 cup (30g) vanilla protein powder (or natural protein powder)
  • 12 tbs chia seeds
  • 1 medium banana mashed
  • 2 pitted medjool dates roughly chopped
  • pinch of salt
  • For Layering
  • 34 cup (120g) fresh or frozen blueberries
  • 2 tbs toasted granola (or gluten free)
  • 14 cup (30g) fresh raspberries
METHOD
This method is based on 1 serving
  1. Combine milk, protein powder, chia, banana, dates and salt in a bowl and set aside for at least 4 hours, or overnight, stirring once to evenly distribute the chia.

     

  2. At the same time in a small saucepan, simmer blueberries with a dash of water over medium heat for at least 5 minutes to breakdown and thicken to a sauce consistency. Place in the fridge to cool.

     

  3. When ready to serve, layer blueberry compote and chia mixture into a small jar or glass. Top with granola and fresh berries to serve.
